Matsutake Mushroom Baked on Cedar Plank

A good wine to pair with this spans from a Pinot noir or Pinot gris to a Merlot. The simple preparation and the mushroom call out for a Pinot yet the smoked cedar allows for any number of big reds.

Ingredient List

Here's what you need:

4 (6 - inch) square cedar planks, untreated

8 grade A Matsutake mushrooms, cleaned of debris and brushed

1/4 cup olive oil

Sea salt

This should yield about 4 servings. Great appetizer whether you are a vegan or not.

Here's what you do:

Preheat oven to 400°F. Slice mushrooms very thin. Place in a bowl. Lightly season with salt. Combine mushroom mixture with olive oil, tossing gently with your hands. Arrange mushrooms flat on each plank. Bake until softened. Serve immediately.
