Welcome to Avalon's local email news for the
weekend of March 23-25, 2006.
We're featuring wines and foods with an Italian theme
this weekend- Chris will be pouring Italian wine from the Piedmont region
of Italy, and a French Chardonnay. He'll be talking about some of his
favorite cooking ingredients, and sharing recipes.
We're well stocked now on an array of Balsamic vinegar,
Champagne vinegar, Italian, French, and Spanish olive oils, Nut oils,

will feature our very own Chris Haggerty pouring some of his favorites,

Traditionally, white truffles have been foraged
and mainly consumed in the Piedmont area of Italy. More recently, with the aid of modern
transportation, cooks around the world have been able to use white truffles
in their restaurants and at homes – at a modest cost of at least
$200 an ounce!
There are a couple of products on the market today
that have helped alleviate the pocket book pains. We carry two affordable
products made with white truffles that allow the average mortal to enjoy
the supernatural aromas and flavors of this subterranean fungus.

White Truffle oil |
White Truffle flour has a wide range
of uses, from additions to rues and sauces, to turning ordinary mashed
potatoes into a gourmet side dish fit for any high end restaurant. I love a simple cream sauce with
truffle flour added to the rue, tossed on some home-made semolina pasta. It
takes as long to prepare as the pasta takes to boil and pairs up with
a bright red Italian wine to cut through the cream’s fat.
White Truffle oil is an oil olive
infused with the essence of white truffles. It can be used raw,
drizzled over salads with toasted nuts for example. It can be added
to sauces just as the white truffle flour. My favorite dish is
a simple risotto with truffle oil added right at the end to start off
a multi course Italian meal. Chris is pouring a great inexpensive Barbera
to go with this recipe.
This week we are offering a special
box complete with the pasta (home-made in Italy), the white truffle

Territorial
Vineyards has racked up accolades since its start in 2001. In
2005, the winery won Wine Press Northwest’s “Oregon
Winery of the Year to Watch.” For the last few vintages, the entry
level Territorial Pinot has barely stayed on our shelves long enough
to justify putting a price tag on it. The 2004 Willamette Valley
Pinot noir from Territorial surpassed our expectations!
It has big aromas of red cherry, hints of raspberry
with dried flowers, sweet vanilla toast and roasted coffee. Juicy
red and black cherry fruit, with herbal spice make this one of the
best values in Oregon Pinot.
